Atmosphere's smoked teriyaki bowl

This surprisingly simple bowl is also super-versatile. Swap chicken for tofu (or vice versa) and revel in the feeling of artistry that whipping up your own teriyaki sauce is bound to give you. Atmosphere shared a recipe for this lovely bowl with us and it will stand you in good stead this season and beyond.

You will need

3-4 chicken breasts or tofu
1 tablespoon olive oil
2 medium zucchini, sliced
Half cup carrots, shredded
1 cup chopped green onions
1 onion, sliced
2 cauliflowers, riced
2 teaspoons sesame seed oil
Salt and pepper to taste
Sesame seeds and green onions for garnish.

Directions

Heat one tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breast with salt and pepper and cook for four to five minutes on either side or until the internal temperature hits 165 degrees Fahrenheit. Remove and place the chicken breast to the side and cover with aluminium foil to keep warm.

In the same skillet, add two teaspoons of sesame seed oil on medium heat, add the zucchini, carrots, and onions and cook until tender for about four to five minutes.

Meanwhile, cook the cauliflower rice.

Remove the chicken from the foil and cut into cubes. Transfer the cubed chicken into a large bowl.

Slowly pour teriyaki sauce over the chicken and combine using a spoon. Assemble the bowls with cauliflower rice topped with the chicken, and then the veggies.

Garnish with sesame seeds and green onions.

For the Teriyaki sauce you will need
3/4 cups soy sauce
2 teaspoons rice vinegar
1 clove garlic (pressed)
1 tablespoon tapioca flour dissolved in one and a half tablespoons of water, or 1/4, teaspoon xanthan gum for keto)
2 tablespoons sesame seed oil,
2 tablespoons pineapple juice
Half cup orange juice
1/4 teaspoon ground ginger

Put soy sauce, sesame seed oil, orange, and pineapple juice, garlic and ginger into a saucepan over medium heat. Mix together until combined.

Once the mixture comes to a slow boil add tapioca flour dissolved in water.

Combine all the ingredients, and turn the heat to low. Remove from heat once the sauce is nice and thick.
